President Obama broke new ground on Tuesday night. For the first time, the White House menu cards for a state dinner provided a vegetarian option, in deference to the guest of honor, the Prime Minister of India, who is a vegetarian. Even more historic: it was the first time a guest chef, Marcus Samuelsson of Aquavit in New York, led the White House kitchen for a state dinner.
HEAR THE OBAMA COOK
The importance was not lost on Samuelsson. Waking up on Wednesday morning, after about three hours of sleep, he had not yet come down from his high.
“It was the biggest dinner I cooked in my life — in terms of the occasion,” said the chef, born in Ethiopia, raised by a Swedish couple in Sweden and now a naturalized American.
The menu balanced American and India cuisine, but it was the style of the food preparation that really set things apart: this was not banquet food that was designed to sit around before being served.
“What I wanted to bring was the restaurant approach where food is cooked a la minute,” he said.
